For this lightly peated expression we peat-smoke using peat from the Olympic Peninsula uniquely done at our distillery using traditional methods.  \u003c\/p\u003e\n\u003cp\u003eThe resulting nose is a classic pot-still with bags of fruit and delicate wood smoke. Cream soda, patisserie custard, marzipan, cream toffee, Cornish clotted cream and wholemeal biscuit yield to heather honey, strawberry jam, and sweet potpourri. The finish has coconut husk, teak furniture and sandalwood embers.\u003c\/p\u003e\n\u003cp\u003eThe palate is velvety with oat muesli, crystal malt, vanilla, orange liqueur, ripe apricot, prunes and papaya, leading to crisp fresh snow-peas, pistachio nuts, smoked hazelnuts and sweet caramel toffee.
