Distilled using local British Columbia barley peat-smoked at our distillery to 54 ppm with Scottish peat traditionally hand-cut on the island of Islay. It was then fully matured in a carefully selected Kentucky Bourbon cask, blanketed with fresh maritime Vancouver Island air.
The nose is lightly medicinal leading to fruit and floral notes. Following the light peat scent, iodine, sphagnum moss and watercress comes juniper, pine, carnation flowers, cherries and lychees.
The palate is velvety with vanilla pods, blackberry jam, and fresh blackcurrants.
The Islay peat presents as iodine, seaweed, dried tobacco leaf and leather.
Sherbet, sourdough and malted milk yield to clover honey and then finishes with dried ginger, cellared oak casks, dulse and potpourri.

Bought it for a friend for Christmas, he LOVES it.
This is a very good project and very tasty.
Peat dominates the nose and palate. Salted caramel apples. Very easy drinking and before you know it, half the bottle is gone.
Deliciously peated and beautiful! Sweetness and fruit notes with a healthy smokiness! Balanced and exquisite making a superb Canadian whisky!
